In the foothills of the Appalachian Mountains, the small town of Morehead, Kentucky, is home to the biggest greenhouse in the US. It’s a high-tech operation using robotics, artificial intelligence (AI) and data to grow up to 45 million pounds of tomatoes per year. AppHarvest says its greenhouse yields 30 times more per acre than open fields, while using 90% less water.
